What changes, and what does not
Detail is thrown away for the first time
PDF keeps every pixel exactly. JPG does not, and that is the point of it: the file gets far smaller because detail your eye is worst at noticing is discarded. Keep the original if you may need to edit it again.

About PDF
A fixed page description. It records where every glyph and line sits, which is why it looks identical everywhere and why pulling structure back out of it is hard.
About JPG
The safest choice: every device, upload form and printer accepts it.
What do I get back?
One JPG per page. A single page comes back as one image; several come back as
a zip, because browsers throttle a burst of downloads triggered by one click. A PDF
page has no resolution of its own, so you choose one: 144 DPI is right for reading on
screen, 216 for printing or zooming in.
